Chicorée ist auch unter den Namen Chicory, Endivie oder Radicchio bekannt. Die Sorte Chicoree Pain du Sucre (Zuckerhut) erhielt ihren Namen durch die zylindrische Wuchsform und hat nichts mit dem Geschmack zu tun. Die Pflanzen bilden längliche, lockere Köpfe und große hellgrüne Blätter. Die Köpfe lassen sich relativ gut lagern und sind daher ein guter Wintersalat.
Chicoree hat unzählige Zubereitungsarten: roh als Salat, blanchiert (um die charakteristischen blassgelben Blätter zu erhalten), überbacken, geröstet, karamellisiert, geschmort, süß oder herzhaft.

Description
Aussaat & Anbau:
Die Aussaat erfolgt in Reihen, dünn verteilt und 1-2 cm tief. Anschließend mit Erde bedecken und regelmäßig wässern. Jungpflanzen vereinzeln. Erntezeit ist im Juni bis November. Chicoree mag einen sonnigen Standort mit nährstoffreichem, ggf. lehmigen Boden.
Man kann Chicoree auch als Wintergemüse anbauen. Dazu wird erst im Sommer gesät, im Herbst werden die dicken Wurzeln ausgegraben und im dunklen, warmen Keller (z.B. Heizungsraum) in eine Sandkiste eingegraben. Etwa drei Wochen später treiben zarte gebleichte Köpfe, die dann geerntet werden.
